We are looking for a Chinese Restaurant Chef for our Hotel Gran Meliá Jakarta (Indonesia)!
Mission
The Chinese Restaurant Chef is responsible for overseeing all aspects of the kitchen at the Chinese Restaurant of the Hotel, ensuring that everything is running smoothly, from purchasing and inventory management to training and development of staff, along with the daily operation. The Chinese Restaurant Chef will also be involved in developing new menu items or specials, as well as creating marketing materials to promote these offerings to customers.
Among the main Responsibilities of the position will be:

• Delivers food cost as per monthly budget
• Achieves excellence by training and coaching the Chinese Restaurant Kitchen Team members towards the continuous enhancement of the food production.
• Collaborates with the Executive Chef for the annual budget, functions of administration and strategy of the F&B department to meet daily operational needs.
• Conducts hygiene audits in order to ensure levels of cleanliness and hygiene are in accordance with local laws and brand standards. Ensure that high level of food safety management and precautions with regards to the Restaurant food safety and hygiene standards (HACCP) are adhered to.
• Responsible for planning and managing the day-to-day operations of the Chinese Restaurant Kitchen, and maintaining the highest standard of food quality and hygiene level.
• Works closely with the Executive Chef and the Restaurant Manager on developing the production of high quality food for the restaurant by taking into consideration the latest trends in presentation, nutrition value and seasonality.
• Aims to achieve the highest guest satisfaction by attending to the guest comments, complaints and requests.
• Collaborates with Executive Chef and Restaurant Manager for the development and implementation of F&B’s annual business plan and medium-term strategies, as well as establishing key performance objectives and plans, to ensure the Chinese Restaurant meets its business targets and drives sustainable, profitable growth.

Main Requirements

• Excellent knowledge of luxury Chinese Cuisine and comprehensive knowledge of Cantonese cuisine.
• Diploma or Degree adequate to the position from a recognized University or Hospitality institution.
• Outstanding leadership abilities.Excellent management of Human Resources & Talent.
• Excellent communication level in English and Chinese are mandatory.
• Minimum 5-years experience in a similar position managing the operations of a Chinese Cuisine Restaurant at international Hotels or Awarded Restaurants.
• Innovative, customer- and business- oriented
