Located in the untamed paradise of West Sumba, our client is a new open five star luxury hotel and villas. It is the perfect hub from which to explore the island, with its pristine beach and mind-blowing landscapes of natural lagoons, salt-water lakes, and traditional villages. The resort plants its flag in the unexplored west of Sumba, a part of Sumba island which is a world of its own.


An Executive Sous Chef, wears much more interesting hats than the job title suggests. A culinary architect. An innovator of Asian and Indonesian speciality cuisines. A genius in engineering quality menus that drive profitability and bring a smile to a room full of happy guests.


If you have an eye for detail, passion for food and service, the leadership skills to effectively manage and mentor, provides guidance and a flair to communicate to a team of driven and dedicated kitchen, then we'd love to hear from you!


Responsibilities


  • Assisting in the planning and development of event menus and recipes
  • Ensure quality control and presentation of the food
  • Ensuring proper handling and storage of all food items in accordance with the Company standards and sanitation regulations
  • Maintain a planned food cost on daily expenses in terms of purchases, manpower and the food cost to be in-line with budget
  • Supervising, training and developing staff and ensuring consistency in work performance
  • Assisting in leading kitchen operations for property
  • Takes full responsibility of portion control, usage, wastage according to recipe standards
  • Assist executive chef with menu creation


Requirements


  • Experience working in a remote location is a plus!
  • Demonstrable experience in creating menu
  • 2+ years of demonstrated experience in similar position
  • Strong analytical and data analysis skills
  • Knowledgeable and well-versed in Asian, specifically Indonesian cuisine
  • Experience in a luxury five-star property
  • Have good oral communication skills
  • The ability to produce excellent high-quality food
  • Experience in fine dining restaurant is highly advantageous
