Hotel Overview


Situated in Senayan Square at the South end of Jakarta's Central Business District, Fairmont Jakarta will feature 380 spacious guestrooms and 108 Fairmont branded suites. Additional features and amenities to the urban hotel include a number of lounges and several restaurants featuring a variety of culinary offerings. For corporate events and local galas, the hotel features 3,500 square meters of function space, including a 1,200 square-meter ballroom.



Executive Pastry Chef


Executive pastry chef is responsible for the production of all pastries, desserts, breads and other baked products. This position gives operational support to the Executive Chef / Director of Culinary in meeting all divisional targets and objectives with a view to maximize guest satisfaction as well as protecting all assets of the property. In addition to overseeing dessert preparation, executive pastry chefs may handle tasks such as supervising employees, ordering supplies, creating budgets and adhering to sanitation regulations.


Employment will be under local contract.

What You Will Be Doing


  • Maintains purchasing, receiving and food storage standards.
  • Creates decorative food displays.
  • Recognizes superior quality products, presentations and flavor.
  • Make sure our products are consistent at all the time
  • Liaise daily with the Outlet Managers to keep open lines of communication regarding guest feedback.
  • Manages day-to-day operations, ensuring the quality, standards and meeting the expectations of the customers on a daily basis.
  • Keep the consistence all product everyday.
  • Performs all duties of kitchen managers and colleagues as necessary.
  • Ensures compliance with food handling and sanitation standards.
  • Maintain and enhance the food products through creative menu development and presentation.


Qualifications


Your experience and skills include:


  • Good understanding of menu engineering, how to read, action and apply to menu writing
  • Has formal culinary training through associate's or bachelor's degree programs in pastry arts.
  • Must have relevant written/spoken language ability in English and Bahasa
  • Computer literate in Microsoft Window applications an asset
  • Good understanding of food cost, how to calculate and manage
  • Possesses several years of experience in the industry.
  • Quality management and quality control
  • Strong interpersonal and problem solving abilities
