Teppanyaki Chef
Seeking passionate Teppanyaki cuisine experienced Sous Chef to lead the menu development and kitchen brigade at a fine dining Teppanyaki restaurant, based in a luxury hotel in the heart of Jakarta.
We believe the role of Sous Chef is not just a chef. He/she is a leader, a creator and a role model in the venue and with the team: has the insights on international and domestic restaurant, bars and culinary trends
is a culinary ambassador to your internal and external guests cooks by example by being hands on and mentor in the kitchen.

As the in-charge Sous Chef, you will take full responsibility for all aspects of the venue Teppanyaki kitchen being pro-active, creative and results driven. You will be responsible for the quality of overall culinary output of the venue including private events and other potential revenue generating areas. You will ensure a good working environment and colleague relations throughout the kitchen and should further be responsible for the training and professional development of the kitchen brigade. Furthermore you will also ensure, that quality, hygiene and other standards are kept or surpassed, at all times.
The Sous Chef Is Responsible For The Following:
- Strive to improve kitchen operation procedures
- Be responsible and accountable for the overall venue food cost as well as kitchen supplies, kitchen energy costs and kitchen utensils, embracing sustainability.
- Create and develop new dishes and recipes together with Executive Chef of Hotels by keeping up with the latest market trends and on concept.
- Having strong interpersonal skills and leadership skills to engage and motivate key stakeholders, mentor teams. Passion for creating exceptional guest and colleague experiences
- Plan co-ordinate and supervise all menu implementations in a timely manner
- Having strong creative abilities in contemporary, creative, authentic tasting Korean cuisine and on-concept-menu development.
- Foster positive thinking and motivation within kitchen by being hands-on in preparation and service being proactive on more effective ways of running the kitchen
Requirements:
- Experience / background in Japanese cuisine is required.
- Fluent in Japanese is a must
- 3-5 years of Teppanyaki experience in an fine dining restaurant (hotel or freestanding)
- Fluent in English and Indonesian is a plus
- Good command of English (oral)
- Ability and thrive working in Jakarta competitive luxury hotel and R&B market, being creative and solutions orientated.
- A can-do attitude team player with the ability to cope in a fast-paced environment.
- Experience of running restaurants and kitchens to budget targets combined with strong organizations, time management and communication skills.
- Culinary degree or culinary training certificate
