We would like an experienced Culinary Director to help with the full food and beverage operation. The Culinary Director will work closely with the Food and Beverage Manager and Executive Chef to manage multiple restaurants, bars, destination dining, and catering events and activities. NIHI Sumba, the best hotel in the world for two consecutive years by Travel + Leisure, awaits you.
Key Responsibilities
- Develop and manage the culinary team, overseeing menu development and creating unique and innovative guest culinary experiences.
- Ensure all food is prepared to the highest standards using the freshest and finest ingredients while managing food costs and inventory levels.
- Manage all aspects of the resort's culinary operations, focusing on natural wood and fire stove cooking to create new concepts that deliver exceptional guest experiences and drive revenue growth.
- Build and maintain strong relationships with suppliers and local farmers, staying up-to-date with industry trends and best practices.
- Oversee the order of service in the food and beverage department to ensure efficient and high-quality service delivery.
- Foster a culture of creativity, experimentation, and continuous improvement.
Qualifications
- Experience in overseeing the food and beverage department as well as kitchen operations.
- Interest in surfing or other outdoor activities, and a willingness to explore and appreciate the local culture
- 10+ years of culinary experience, with at least five years in a leadership role
- Strong leadership and communication skills, with the ability to motivate and manage a team
- Extensive knowledge of international cuisines and culinary techniques, with experience working in Asia
- Experience living in remote locations, with the ability to adapt to a unique and challenging environment
- Passion for food and a commitment to excellence in all aspects of culinary operations, with a focus on natural wood and fire stove cooking
