Job Description

The F&B Cost Controller will monitor and control all procedures that impact the receipt, issuance, general controls and sales of food and beverage, and ensure that all control functions are enforced according to the company’s internal policies and procedures. You will create processes in order to improve cost control metrics and achieve the company’s profitability objectives.


Cost Controller Responsibilities

  • Other duties from time to time as assigned by management as necessary.
  • Manage critical inventory audit tasks to ensure the correct number of items are in stock and the frequency of inventory counts.
  • Establish and maintain standards for consistent cost control for all F&B items.
  • Ensure profit and loss (P&L) accuracy by consistently balancing restaurant expenses for overspending or miscoding.
  • Review costs on a daily, weekly, and monthly basis and take corrective action where required
  • Support month-end and year-end F&B cost statistics close process
  • Ensure Cost of Good Sold (COGS) – Beverage calculation is done after each Cash Bar function.
  • Produce on-demand F&B control-related reports/recommendations.
  • Train teammates in all aspects of inventory management and provision operations.
  • Minimize corrections and adjustments through policy and strong procedural commitment.
  • Analyze and explain variances of actual vs budgeted F&B cost
  • Develop and implement improvements and cost-cutting measures to existing operating procedures to maximize efficiency without compromising quality.
  • Work directly with staff to ensure departmental reports are completed on time and that deadlines are met.
  • Monitor aging daily to reduce or minimize any financial adjustments or collections.
  • Monitor the locations up keeping procedures such as stock control and stock levels.
  • Provide weekly F&B cost and revenue forecasts.
  • Communicate weekly restaurant checkbook, aging status, and F&B costs.
  • Ongoing monitoring and reporting of cost and controls within the group.
  • Ensure all orders placed via the supply chain are submitted promptly following the storing schedule and order due dates.
  • Support target analysis and budgeting processes.
  • Analyze purchase orders before they are sent to purchasing, make adjustments based on their research, and provide location management with an explanation.
  • Facilitate monthly profit and loss (P&L) critiques with management to discuss shortfalls in revenue production and overspending.
  • Monitor location usage as well as stock movement (slow/fast-moving items).
  • Develop means to increase profit through proper inventory and spending procedures.
  • Manage provisioning the locations in liaison with the storing schedule.
  • Oversee inventory and supply chain management with operations team according to company guidelines.



KEY QUALIFICATIONS

  • Excellent written and verbal communication with a strong sense of professionalism
  • Proficiency with Microsoft Office, Google Workspace, and other office systems and tools are a plus
  • Establishes a friendly atmosphere of superior guest service and product quality
  • Great reputation for working in a team environment and acting with integrity
  • Interest and creativity in building team culture and fostering a positive and productive work environment
  • Ability to exercise good judgement when exposed to highly confidential information
  • Weekend and odd hours may be required based on business needs
  • D3 degree in Data Analysis, Business Administration preferred or equivalent experience
  • Exceptional time management with attention to detail.
  • Proven experience minimum 1 years in the same position in FB Industries
  • Demonstrated excellent communication skills, both oral and written (English)
  • Analytical skills and reporting skills are required.
  • Time Management efficiently & familiar with POS SYSTEM - SOLIS and ACCURATE
  • Professional fluency English (written and spoken)
  • Interest in learning and growing with the team and ability to proactively look for ways to help the team to function more smoothly across multiple locations is a plus
  • Experience in supply chain management, preferably operations, warehouse, and/or purchasing leadership
  • Possess a “can do” attitude and comfortable operating as part of a greater team that support one another
  • Ability to thrive in a fast-paced deadline driven environment while maintaining composure under pressure
  • Ability to handle multiple tasks, work well in environment with time constraints, and troubleshoot effectively
  • Extremely organized and exceptional response rate
