Menu (50%)

• Develop and propose a new menu, including creating and maintaining standard drink recipes

• Improve or modify the existing menu

• Provide direction and control on drink preparation, in making and mixology process

• Control drink quality before serving

• Monitoring and controlling ingredients to ensure consistency and quality

• Selecting vendors for ingredients and/or bar equipment purchase

• Responsible for ordering and purchasing ingredients, including receiving ingredients to ensure quality is met

• Responsible for cost and inventory control, and also conduct monthly inventory

• Control waste management

• Collaborate with Head Chef and Sales & Marketing team in terms of promotions

Bar Operation (20%)

• Maintain Bar equipment to avoid breakage or broken equipment

• Schedule Bar equipment maintenance

• Arrange equipment purchase or repair

• Maintain cleanliness standards in all Bar area

Team Management and Development (20%)

• Develop a top-notch service team, including hiring and training new team members, and assess team members who require further training

• Provide performance appraisal and provide recommendations regarding staff evaluation, hiring, promoting, disciplinary action, or dismissal of employees within the area of work

• Lead the team for drink consistency

• Setting and training sanitary and safety standards

• Crate and manage roaster/schedule

• Handling team conflicts or issues

• Maintain strong interaction with day to day performance of the restaurant and be accessible to both staff and management

JOB REQUIREMENTS:

• 2-4 years of strong Head Bar experience

• Experience in drink mixology, including traditional drinks. Knowledge of wine and beer is a must

• Hands-on experience in developing team members and leading by example

• Ability to work with a variety of different cultures with inputs from both local field and head office (New York)

• Excellent organizational skills and detail orientation. Other Duties

• Perform all acts, duties, and obligations and comply with such orders as may be designated.

• May be required to undertake the duties of another position, either in addition to or instead of the above duties.

• May be required to work additional hours by way of overtime either as and when requested to do so.
